What Makes these the Best Brownies?

It’s National Brownie Day so I thought this would be the perfect chance to share the ultimate brownie recipe that I came across recently. If you asked my husband, there can never be too many brownie recipes – Turtle brownies, Lunch Lady Brownies and for some healthier options – Almond Flour Brownies and Frosted Paleo Brownies.

Over the years, he’s tried many, many different brownie recipes I’ve made. And so far, these are the best brownies he’s tried so far.

What makes these the best brownies? They are actually an adapted version the new cookbook, The Simple Kitchen. This book is from my friends Donna and Chad Elick, the couple behind The Slow Roasted Italian.

It was so hard choosing just ONE recipe to make so I ended up making TWO (the first one was these Ham and Cheese Sliders)

This book is loaded with more than 80 amazing recipes that are easy to follow and bursting with flavor. Sooo perfect for these busy nights, especially leading up to the holidays.

From appetizers, to one pot meals, to salads, to desserts, this book will be used again and again at our house.

If you’re looking for a gift for that busy cook in your life, you definitely have to get your hands on this one.! Find it on Amazon HERE.

What makes the best brownie recipe better than boxed mix brownies?

They have what we think is just the right amount of fudgy-ness with a shiny, crackled top and the most important – not dry in the slightest.

If you are all about that crisp crackly top, ooey -gooey fudge-like center, studded with chunks of molten chocolate then these brownies are definitely for you!

These brownies not only taste amazing but they are also super easy to make from scratch.

They come together in a few minutes in just one bowl and require no special mixers. There’s also a good chance you already have these simple ingredients in your pantry. So rich, chocolaty and everything we love about brownies made from a box.

  • You start off by melting some butter and combining it with brown and granulated sugar
  • Donna includes 1 teaspoon instant coffee and vanilla bean paste in her recipe. I left them out since I did not have them on hand and used pure vanilla extract instead. Feel free to add those if you have them on hand.
  • Whisk in the cocoa powder, vanilla extract, eggs, baking powder and salt. One tip that Donna includes in her book is to whip the batter, until it’s nice and fluffy for a few minutes. This helps to create that crinkly “meringue-ish” top.
  • Stir in the flour until just combined and finally, sprinkle in some chocolate chips
  • Spread the batter into a parchment paper-lined pan and bake. I also like to include a sprinkle of sea salt right after they come out of the oven.

FAQs

How to make brownies more sweet? ›

Salt enhances the sweetness in your brownies. You might think that adding salt would make brownies, or any chocolate, salter, but it actually brings out the sweet quality in these types of desserts.

What is the best sugar for brownies? ›

Using caster sugar in brownies also helps to get a super crinkly top. Caster sugar has a smaller grain size than granulated sugar, so it dissolves better in the egg mixture, to give that nice crinkly top. If you only have granulated sugar on hand it will still work fine particularly if you are in the US.

What is basic brownie made of? ›

Is it better to bake brownies in glass or metal? ›

If you make brownies or bake often, consider using or purchasing a metal pan to use in place of your Pyrex dish. Metal pans, specifically aluminum, absorb and transfer heat more consistently than glass, making them perfect for delicious, evenly-cooked, moist brownies every time.

What happens if you don't add vanilla extract to brownies? ›

Mellowing brownies out with vanilla is not going to give you as deep and rich a cocoa flavor. “One other thing I find really helpful is that I never use vanilla extract in my brownies,” says Gossett. “I don't do that in my cookies either.” All chocolate, except for cocoa powder, contains vanilla, Gossett explains.

What are the three types of brownies? ›

Brownie textures fall into three general camps… Cakey, fudgy and chewy. Cakey brownies, like the name implies, are light, moist and airy, with a slightly fluffy, cake-like interior. Fudgy brownies are moist, dense and gooey, with almost the texture of fudge, but not quite as compact.

Can you use hot chocolate instead of cocoa powder for brownies? ›

Because most brands of hot chocolate powder include sugar or sweetener, you may wish to reduce the amount of sugar you add to your baking recipe. To use it as a cocoa powder substitute, you need to use two teaspoons of hot chocolate mix for every teaspoon of cocoa powder in the recipe.

Should you add baking powder to brownies? ›

Do I need baking powder? In short, the answer is no. The reason why is because we want these brownies to be FUDGY. Leaveners work to give rise to baked goods, so if you were to put a rising agent in the brownie batter, you might just end up with a cakey brownie.

What does adding an extra egg to brownie mix do? ›

If you want to get a little more creative with your brownie mix hacks, add an extra egg to the batter. The extra protein will help thicken up the batter and make it fluffier, creating a more decadent, fudgy texture. You can also add the yolk by itself in addition to the 2 eggs a box brownie mix typically calls for.

What happens if you use milk instead of water in brownie mix? ›

Instead of adding in the recommended amount of water, substitute it for milk to give the batter a slightly different consistency. Milk is richer than water, so the brownies will be richer, and they'll be denser, like fudge.

Can you mix brownie mix too much? ›

For great brownie texture, avoid overmixing your batter.

Overmixing your batter can cause you to incorporate too much air into the brownies, leading to a change in texture. According to Food52, you want to mix any batter until it forms a uniform dough, no more and no less.

How do you reduce bitterness in brownies? ›

Bitter brownies can result from overbaking, using too much cocoa powder, or even using cocoa powder with a high acidity level. Try reducing the cocoa powder amount, baking for a shorter time, and adding a pinch of salt to balance the flavors. Happy baking, and here's to sweeter brownies!

What does white sugar do to brownies? ›

Also, sugar does much more than sweeten brownies. It liquifies as they bake, creating a softer center. Eggs: Eggs are one of the main ingredients in brownies. Just as they do in my beloved flourless chocolate cake recipe, eggs bind, add richness, tenderize, and provide structure here.
