Raw bananas are very widely used in south Indian cuisine to make fry, stir fry, koftas, bajji, chips etc. It is a vegetable that gets cooked very quickly and easily. I make raw banana recipes frequently at home, either this crispy poriyal or spicy raw banana fry mostly. At time I Also make raw banana chips or bajji.
Raw bananas used for cooking are firm long and they are different from ripe bananas. It has a slightly chewy texture and inviting flavor that tastes very good in savory recipes. Especially you can use steamed and raw bananas as base for veg cutlets, kofta, murukku recipes instead of potatoes.
Vazhakkai poriyal recipe is best side dish for sambar or rasam rice. You can make this poriyal very crispy with very less oil. While making for elders you can also make this stir fry soft.
Vazhakkai Poriyal Ingredients
To make vazhakkai poriyal we need just very simple ingredients that are staple in the pantry. Making this recipe is also very simple and straight forward.
We need oil, mustard seeds, urad dal and curry leaves for tempering. To season raw banana poriyal you just need chili powder and tumeric powder apart from salt. I sometimes use sambar powder in this recipe.
How To Make Vazhakkai Poriyal?
To make raw banana poriyal first heat 2 tablespoons oil in a heavy pan. Temper with mustard seeds, urad dal and curry leaves.
Add the peeled and cubed raw bananas and mix well. Saute in medium flame for 3-4 minutes. Season with salt, turmeric powder and chili powder. mix and well and continue to cook for 12-15 minutes in medium flame. Stir frequently to avoid burning at the bottom. Once cooked completely,remove from flame and serve.
What Goes Well With Raw Banana Fry?
You can serve vazhakkai poriyal warm or hot with sambar rice, rasam rice. This stir fry also goes well with lemon rice, tomato rice, coconut rice.
Tips To Make Best Vazhakkai Poriyal
Once you peel and chop the raw bananas, make the recipe immediately or keep the chopped raw banana in water until use to prevent blackening.
Use a thick bottomed pan or well seasoned cast iron pan for this recipe.
if you want to make this fry crispy, cook in medium flame for 15-20 minutes keeping te pan open. If you need sift poriyal, just cover the pan and cook for 12-15 minutes.

How To Make Vazhakkai Poriyal Step by Step
Peel and cube the raw bananas in same size.
Heat 2 tablespoons oil in a pan. Temper with mustard seeds, urad dal and curry leaves.
Add the chopped vazhakkai and mix well. Saute for 4-5 minutes.
Season with salt,chili powder and turmeric powder. mix well.
Cook in medium flame for 15-20 minutes. Stir frequently and saute till the poriyal turns crispy. Serve hot.

Ingredients
- 2 large raw bananas peeled and cubed
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal
- 10 curry leaves
- 1/2 teaspoon turmeric powder
- 1 teaspoon chili powder
- salt to taste
