Prior to 6 months ago, my motto for beans was, “love to eat ’em, hate to cook ’em!” Cooking beans the regular old way requires forethought the night before to soak the beans. But the problem with that is that usually, the night before, I’m too full from dinner to even think about what I’d possibly want to eat the next day. It requires extreme planning and organization – which I just do not have.

Then I learned that you can cook beans in a pressure cooker WITHOUT pre-soaking the beans the night before..

They wanted to pay me to create a recipe using the EZ Bean Cooker, but instead of paying me, I suggested that they donate $2,000 to my local Boys and Girls Club that Scott and I have adopted.

What a great trade! I get to enjoy beans, cooked in 60 minutes or less WITHOUT SOAKING and the DeSoto branch Boys & Girls Club made their fundraising goal. They happened to be short in fundraising and this made up the difference.

Pressure Cooker White Bean Chili Frito Pie Recipe

Directions are for either a regular pressure cooker or an EZ Bean Cooker.

Prep Time 5 minutes mins

Cook Time 50 minutes mins

Servings 8 - 10

Ingredients

  • 2 cups cooked ham, cubed
  • 1 red pepper, chopped
  • 2 medium tomatoes, chopped
  • 1 cup frozen corn kernels
  • 1 onion, chopped
  • 1 pound dry white beans, rinsed & drained (Great Northern Beans)
  • 2 cans diced tomatoes with green chiles (look for Rotel brand)
  • 1 envelope taco seasoning
  • 2 cups water

Instructions

  • Sort beans by removing and discarding any foreign material or shriveled/discolored beans. Rinse beans with cold water. Add the sorted and rinsed beans to the inner cooking pot of the pressure cooker. Add the water and additional ingredients.

FOR EZ BEAN COOKER:

  • Replace the lid on the EZ Bean Cooker and turn clockwise to lock the lid in place. Make sure that the pressure release valve is in the closed vent position. Select the "Great Northern Beans" button on the cooker, then push "Start". Once the cook cycle is complete, use caution to manually release the pressure.

    Im intrigues by the EZ Bean cooker. With four kids this electric pressure cooker sounds like a real timesaver to parents. I’m just wondering about the 2 cups of water being sufficient for the pound of white beans.

    Are you sure that the amount of 2 cups of water is enough to cook the one pound of unsoaked white beans?

    Greek Pasta Salad

    8 ounces rotini spaghetti
    1/2 cup olive oil
    1/2 cup red wine vinegar
    1 1/2 teaspoons garlic powder
    1 1/2 teaspoons dried basil simply leaves
    1 1/2 teaspoons dry oregano
    3 cups chopped up fresh mushrooms
    15 cut in half cherry tomatoes
    3/4 cup crumbled feta cheese
    1/2 cup sliced green onions
    1 (4 ounce) can sliced black olives

    1. Bring a huge pot of lightly salted normal water to a boil. Add rotini noodles and cook for 8 to 10 minutes or until finally al dente; strain.

    2. Mix together prepared noodles, olive oil, vinegar, garlic powder, basil, oregano, fresh mushrooms, tomatoes, Feta cheese, green onions and olives. Cover and cool for at least 2 hours, serve cold.

    Greek Pasta Salad is now ready…..!

    Thanks for your interest in the EZ Bean Cooker! The EZ Bean Cooker features preset bean variety buttons – each of the settings was specifically developed to cook a particular variety of bean without any presoaking beforehand. Our cook times are for beans that have not been presoaked.

    If you are concerned about gas, there are over the counter dietary aids that assist in digestion or another alternative is to use a small amount of the Mexican herb Epazote while cooking which may also help with digesting beans.

    I always wanted to get a pressure cooker for to make boiled peanuts and jongs. Canitas is another thing I like for taco and burritos and tamales.

    Allie, does the recipe book have any recipes that say to soak the beans? I have cooked beans with a regular pressure cooker. It is easy, fast, and I soaked the beans first. How is this EZ Cooker better than a regular pressure cooker?

    Jaden, great recipe, had my doubts about EZ bean cooker sounded like a culinary one note samba that would take up room in my space challenged kitchen. I brighten up when they further described it as a electric pressure cooker, now that I can dance to!

    Sounds good, but you don’t really have to soak beans overnite….I cook dried beans all the time…you just need to put them in a pot add warm water and boil 2 mins. take off burner, let set for an hour, pour off the water and rinse beans and then put on to cook, and it works just as well as soaking overnite….

    Some claim soaking overnite helps with gas,but just put a pinch of baking soda in the beans when you cook them and it helps with the gas also….

    BTW, you were giving one of these cooker’s away in a contest, have you posted the winner yet ? Don’t think I saw it…..I may be a winner and not even know it LOL.

    I’m not much into uni-tasker tools but I am seriously considering one of these. The last time we overnight soaked beans (just 2 weeks ago) Alexis put them out and I didn’t know it. She forgot. 2+ days later, I open this container wondering what it was and was blown away by the horrid odor of fermenting beans.

    Love the recipe too, Petro’s are my favorite, but these frito pies sound great, Jaden. Nice way to get a donation for the organization too!

    I am interested in your EZ Bean cooker. The Amazon ad says you cook the beans without soaking. Can you soak them and still use the cooker? I prefer to soak them and discard the water. Seems to cut down the gas considerably.
