Great recipe. As usual I modified like I do with almost every recipe I try. I added and stirred in quite a bit of dry fruit before adding condensed milk (raisins, almonds, pumpkin seeds, flax seeds etc). Did not use sugar but added a tbs Honey to make it soft as my extra ingredients were making it too dry. Net result, amazing. Thanks for the recipe. Will be used quite often. Easy and taste to die for.

A popular method of making Burfi is with condensed milk. This negates the requirement to add sugar, since the condensed milk is sweet enough. Many recipes simply call for milk powder and condensed milk. While this is a perfectly delicious way to make burfi, the end result is very smooth and Peda like in texture.
If the mixture turns lumpy, turn the flame to the lowest level and break them all before proceeding to the next step. Else the lumps will get hard and spoil the texture of the barfi. Maintain the flame at medium to ensure the mixture does not stick to the pan. Using a non-stick pan works best for this recipe.

Condensed milk is typically added to thicken the dessert – especially milk-based ones. A thicker consistency would therefore be preferable. Nestle Milkmaid has a much thicker consistency in comparison to Amul's Mithai Mate. The folds of condensed milk that Milkmaid formed were much thicker.
There are two reason for this, either it is not completely cooked or you had put that burfi mixture on flame while cooking for more than the required time after adding sugar into it.
Firstly, make sure to roast the besan on a low flame until it turns golden brown. else the taste of besan will remain raw. Also, the consistency of sugar syrup is crucial, if it is overcooked the burfi hardens, and if undercooked then it remains soft.
Milk-based sweets: Sweets like Rasgulla and Sandesh typically last 2-3 days when stored in the refrigerator. Dry sweets: Dry sweets like Barfi and Chikki can last up to 2 weeks when stored in an airtight container in a cool, dry place.

Dulce de Leche is a heavenly substance. At first glance, it looks a little like caramel, but it's actually sweetened milk that's been heated long enough to cause a caramelizing to occur. That's the long-winded explanation, so here's the short one: It's creamy, dreamy substance used as an ingredient in so many desserts.
Condensed milk was considered a safe, long-life alternative to fresh milk at the time. Nestlé's first product in Sri Lanka in 1906 was also Milkmaid. Since then, for over 100 years, Milkmaid has been a household favourite in Sri Lanka and is synonymous with mouthwatering desserts today.

By the turn of the 20th century, quite a few brands of sweetened and unsweetened condensed milk existed in the Indian market. But the one brand that became the synonym for condensed milk was Milkmaid.
Barfi is one of many milk-based Indian sweets. Traditionally, it would have been made by slowly cooking milk down for hours until it condensed into the dough-like evaporated milk solids known as khoya or mawa. A quicker and easier way of making barfi starts with milk powder instead.
